Victoria Sandwich Cake – August Bake

Victoria Sandwich Cake

For this month’s bake here @ Sweet & Simple Bakes we thought it would be enjoyable to bake a timeless classic cake. This cake was made popular in the Victorian times in the U.K. and named after Queen Victoria, and its lead to believe her majesty was very fond of this particular cake. It would be served for afternoon tea when ladies & gentlemen would take tea, sandwiches and cake for refreshments before their evening meal to bridge that hunger gap!

I have been baking this cake now since childhood and one recipe that has been truly tried and tested thought the years. It consists of two sponges that are sandwiched together with jam with the option of buttercream if you prefer, with a little caster sugar sprinkled over the top of the cake. I do hope that you come to enjoy baking this cake as much as I have throughout the years!

hi, I wanna join this event. And have link the badge to my blog. However, I have a comment..Chinese cakes are usually steamed..not baked. Can I submit my 'steamed cake' with the story that goes with it? I have not posted the recipe or picture on my blog yet. But have everything on hand now.

Hi Gina, it’s SO lovely to *meet* you too and a very warm welcome to SSB :) Maria & I are always joyful to have new friends to bake with us and many thanks for linking us with a badge on your blog – this is very kind of you and we do appreciate it and it does help spread our baking blog :)

We are aware here at SSB that diet needs have to be taken into account for anyone who has dietary requirements; i.e. diabetics who need to substitute sugar for something that is in suiting for them etc.

Maria or I will post a recipe for that month’s bake and with little adaptations if the ingredients are not sourceable in a certain country & of course dietary requirements everyone follows the same recipe and bakes the same item. We then post a round -up of each monthly bake on SSB from each baker on the posting date. We also kindly ask if you are a blogger to write a post about your bake and link back to us @ Sweet and Simple Bakes on the date specified for posting the bake.

We do hope that you’ll be able to join us Gina in our bake and I would really be interested if this recipe could be baked by the Chinese method of steaming that would open up many new doors into baking cakes :)

hi rosie, I want to share this recipe online on my blog so that everyone gets to read the rich history and heritage behind it. As told to me by my mom. Many young chinese people do not know the significance of eating this steamed cake. Over time, people think its just a snack. I remembered fondly as a young kid, my late granny used to have a stone mill which she uses to make her own rice flour. In turn use this manual 'machine' to make wet rice flour and made this steamed cake.

Maybe I'll give this old recipe a new twist by baking it. And will post the recipe at my blog. It might just work.

Actually I host a food forum too..for 4 long years. to many, its a treasure trove of tried and tested Asian recipes.

Hi Rei, we would really love you to join us here at SSB and I also remember baking this cake at home economics class at school. I still have fond memories of bring home my finished cake and handing over my cake tin to mum with pride *giggle*.

Hi Bimmer, in my option if you are baking this cake in 6in tin I would cut the recipe down by this or the mixture may overflow the tins.

For The sponge
!00g (4 oz) unsalted butter, at room temperature
!00g (4 oz) caster sugar
2 eggs, at room temperature, beaten
!00g (4 oz) self-raising flour
Pinch of salt

*If using plain flour add 1 teaspoon baking powder for every 100g (4 oz*)

This looks like a lovely blog. I am going to try to make the Victoria sandwich cake deadline. My mother made a wonderful sandwich cake, sometimes with just the jam and caster sugar (Brit.talk) and other times, when we were having company, with cream and strawberries.

My grandmother gave me a recipe very similar to this cake. She had an English neighbor in South Africa and they were constantly sharing recipes. Anyway I would not mind at all being 'sandwiched' between your Victoria cake layers! It would be a bond made in heaven!
